An absolutely fascinating natural wine that is almost definitely unlike anything you've had before - being a captivating cross between a fino sherry and orange wine. It's made using the same system of soleras and criaderas as is used in making sherry - where wine from the latest vintage is continually mixed with older and older vintages (this one is between 2011 and 2018). Chestnut casks are used to impart a unique flavour, and they are left open so that a layer of 'flor' (a specific strain of yeast) develops on top, which adds notes of almond, salt, bread dough and green olives. If that isn't enough, the grapes also macerate on their skins for an extended period of time, further adding depth of flavour and body. The finished product is an explosion of flavour complexity and intensity with notes of dried stone fruits, curry spices, orange peel, nuts, flinty-graphitey-salty minerality, etc... The tannins are full and pronounced, and combine with the chewy, savoury finish to leave a lasting impression. Samuel bottles this unfined, unfiltered, and without the addition of sulphur, allowing the crazy winemaking to speak for itself.
Samuel picks only the best grapes from his 35 hectare family plot, all of which are farmed organically with a sprinkling of biodynamic principles mixed in. Despite the baking hot summers - which help the grapes achieve maximum ripeness and flavour development - the high altitude and brisk easterly wind help preserve a nice freshness and balance in the wines. Samuel champions local varieties such as Airén - planted by his grandfather over 60 years ago - as well as extended skin contact to extract the maximum oomph from his wines.
