Birmingham-born Philip Harper is the first ever non-Japanese born brewer to earn the title of Toji, or Master Brewer, in Japan. His bold approach has won many awards and followers, and is perfectly expressed in this exquisite Junmai. “Red Label” is crafted using the traditional pre-modern Yamahai method, harnessing natural ambient yeasts that flourish within Tamagawa’s brewery. The result is a bold, amino-acid-rich sake bursting with layered, robust flavours. Bottled straight from the press with no filtration, dilution, or added intervention, this sake offers a full-bodied, adventurous experience for those ready to explore the depths of sake craftsmanship.
