A genuinely exciting English sparkling white from one of the country's most singular winemakers. Made from 100% Bacchus grown on ancient Jurassic limestone soils in the Leicestershire Wolds, this is low-intervention winemaking at its most expressive - unfined, unfiltered, and with nothing added.

Flavour Profile

Vivid and aromatic on the nose — elderflower, gooseberry, lime zest, and a wild herbal quality that's unmistakably English. The combination of carbonic maceration and extended skin contact gives this wine real texture and depth for a sparkling white, with hedgerow fruit on the palate and a chalky, mineral backbone running all the way through. The natural fizz keeps it lifted and fresh, while the finish is dry, pithy, and genuinely moreish.

Matt Gregory makes his wines from Pinot Noir, Pinot Gris, and Bacchus grown in the Leicestershire Wolds, with an emphasis on careful grape handling and minimal intervention — no fining, no filtering, and wild yeasts throughout. About Bacchus

Bacchus is England's most celebrated aromatic white grape — a cross of Riesling and Silvaner that thrives in the cool English climate. It's known for its intensely floral, hedgerow character: elderflower, blackcurrant leaf, gooseberry, and fresh herbs. In the right hands, and on the right soils, it produces whites that are genuinely world-class. This is one of those.

Its aromatic intensity and textural grip make it a natural at the table. Try it with a cheese board, charcuterie, or a roast chicken.
