Ham Street Col Fondo Meunier
NATURAL / BIODYNAMIC / LOW SULPHITE
This lightly sparkling white is made using the traditional "Col Fondo" method, which involves fermenting the wine in the bottle on its lees (yeast). This gives it a characteristic complexity and flavour, as well as a longer shelf life. Moreish, floral and juicy.
The label celebrates Bitter Dock a plant that easily takes over if left unchecked. As the soil in the vineyard improved, becoming more fungal, with a better structure, the pressure of the dock has slipped away, and is now greeted it as an old friend, doing important work for the soil.
Ham Street Wines is the project of husband & wife team Lucie & Jules, who planted four hectares of vines on the edge of the Romney Marsh. Beginning in organic conversion, they achieved biodynamic certification in 2024. Their work with teas and plants, is driven by a strong sense of curiosity and experimentation, following to the principles of regenerative agriculture. Sulphur use is kept to an absolute minimum, and wines are never fined or filtered. This commitment to the vineyards is an inspiring reminder of what is possible for agriculture in the UK.
