Elsassisch is Bombisch - Alsatian is the bomb! A vibrant and flavour-packed orange wine from Christian Binner, made from Riesling grapes that are treated completely naturally according to biodynamic principles. It has a lovely cloudy appearance due to the lack of filtration, and has a bit of a spritz upon opening. The flavours are intense and complex, with notes of green apple, peach, mango and pineapple, undercut by a clean stony-salty minerality.
The Binners have practised biodynamics for many years, and their vineyards have never had chemical additives. They only plough on Schlossberg hill (by horse); otherwise, there is no ploughing in the vineyards to preserve the microflora of the soil. They harvest late to ensure maximal maturity, which enables them to make their wines totally naturally – with zero sulphur additions for the last 5 years. The cellar is purpose-built: thick earth walls keep it cool, making excellent conditions for long ambient fermentations using native yeasts. All the wines are aged on their lees in foudres of around 100 years old, with the oldest dating back to 1899.
