Champagne Grand Cru, Ambonnay Bereche et Fils

This is a true gastronomic Champagne, made by a passionate grower family that have been well-established in the region since the 19th Century. Made from Pinot Noir grapes from meticulously hand-picked 50-year-old vines that thrive in the clay and chalk-rich soils, and which possess a distinct character that reflects the unique terroir of Ambonnay's South-facing slopes. Fermentation happens naturally and slowly in casks and small vats, allowing the wine time to develop nuanced and complex flavours and textures, before maturing on its lees and aging 'sur lattes' for an astonishing 54 months to add depth and a plush mouthfeel. The wine itself is dense, complex and striking, and develops nicely after opening. Expect a harmonious blend of red fruit, almonds, pastry, toasted brioche, white flowers, honeycomb and subtle exotic spice, with a creamy texture, delicate bubbles and a striking chalky minerality. A great accompaniment to bolder foods such as steak, dark chocolate or anything with lots of fat, and one that's perfect for a special occasion.
