Flavour Profile

This wine opens with delicate aromas of apple blossom, pear, and fresh herbs - think fennel, thyme, and a whisper of aniseed. On the palate it's clean and textural, with orchard fruit, a streak of citrus, and a characteristic saline minerality that speaks directly to the limestone soils it's grown on. The finish is dry, long, and gently bitter - the kind of wine that makes you reach for another glass.

About the Can Sumoi winery

Can Sumoi is the high-altitude, low-intervention project of Pepe Raventós, of the celebrated Raventós i Blanc winery. The estate dates back to 1645, sitting at 600 metres above sea level in the Baix Penedès, with 30 hectares of old vines and 370 hectares of oak and pine forest.Vineyards are farmed entirely by hand and animal - no machinery - using organic and biodynamic principles, with wines made without additives, stabilisation, or filtration. 

About Xarel-lo

Xarel-lo is the great white grape of Catalonia — best known as a key component in Cava, but increasingly celebrated as a still wine in its own right. It's a variety with real character: naturally high in acidity, with herbal and saline qualities that make it one of Spain's most food-friendly whites. At altitude, as here, it develops remarkable precision and freshness.

How to pair it

This is a natural at the table. Its saline, herbal character makes it a brilliant match for anything from the sea - grilled prawns, salt cod, oysters -  as well as tapas spreads, jamón, or a simple plate of good anchovies and bread. Also fantastic with mild cheeses or a long summer lunch.
