Buzet Rouge Totem, Domaine du Pech
BIODYNAMIC / VEGAN / LOW SULPHITE
A blend of Merlot, Cabernet Sauvignon, and Franc, aged in 200-year-old oak for 13 years. An inky-purple in colour. On the nose, there are black cherries, blueberries, and vanilla. The palate is full-bodied, firm, and dense with balanced tannins and a good acidity. Totem tastes younger than its years with red fruit, plums, and brambles present alongside saddle leather and tobacco. This is a great alternative to a premium Bordeaux like an Haut Médoc or Saint-Emilion, made completely naturally.
The Domaine initially thought that 2 years in the barrels would suffice, but upon regular tasting, it took 13 before they were fully satisfied and bottled it unfiltered and without additional sulphites.
