Tillingham QVEVRI Ortega
Aromatic and exotic, yet understated and elegant. Floral notes of bergamot and spice followed by a satisfying delicate smoky texture from the clay.
Ortega was crushed and de-stemmed before being pressed into four Georgian qvevri. Two of them had the addition of some skins, gently punched down by hand during ferment, before being left to macerate for six months. The wine was racked from all four qvevri and blended in stainless steel before bottling without fining or filtration.
Tillingham is set amongst 70 acres of rolling hills and woodlands with far-reaching views along the Tillingham River valley and across to the fortified, hilltop town of Rye, East Sussex, to the sea and the Romney salt marshes. This mixed farm, which dates from the 13th century, is home to vineyards, fruit trees, ancient woodland and livestock.
At Tillingham we are committed to farming in a diverse, poly-cultural way, we believe this is not only a highly sustainable approach, but in conjunction with biodynamics, aims to restore soils to an optimum level of organic matter and microbial and wider ecological diversity.
