Cerruti Ri Fol
This is an energy-filled and vibrant sparkling natural wine like no other. Fermented spontaneously with its native yeasts, and re-fermented (that’s how the bubbles come to life) with frozen must from the same vintage. A vibrant col fondo with gentle bubbles. Flavours of fresh pastry, candied ginger, citrus blossom, and marzipan. With a zesty finish, lime and some chalk. Goes down dangerously easily. An excellent aperitif.
Ezio principally works with just one grape. His Moscato vines are up to 60 years old and planted on steep slopes about 400 metres above sea level. Unusually for the area, they are worked organically with long grass and wildflowers between the rows.
