Champagne Blanc d'Argile Brut Nature, Vouette et Sorbee
An excellent grower Champagne - with the entire product being vinified exclusively by local people who also tend the vines (a rarity in the region). 100% Chardonnay grapes are grown near Chablis according to biodynamic principles and are fermented in oak vats to develop flavours and textures. Malolactic conversion also is allowed to happen naturally, lending this wine a fuller and more rounded texture than its leaner and slightly underwhelming regional neighbours. Despite this, it's packed with racy acidity and striking saline minerality, again like a Chablis, with no sugar being added at any stage. Expect citrus and green apple flavors, as well as more exotic flavours like honey, ginger, and baking spices, like a spiced ginger pudding fresh out of the oven. This is rounded out by the characteristic biscuity and toasted brioche flavours you'd expect from a serious Champagne that is aged judiciously.
