The Rouge-Gorge cuvée is a tribute to the robins which fly in and around the domaine in the spring. It is made from 45 year old Pineau d'Aunis grapes which thrive in the heavy, siliceous clay over limestone soils of the vineyard. The grapes are destemmed and fermented in vats with gentle pigeage (punching down) over a three-week period. After pressing and blending, the wine is aged in large, old oak barrels for a year, before being bottled without filtration and with only a light dose of sulphur added. It has an enchanting fragrance of wild strawberries, mulberries, and cracked black pepper, complemented by delicate floral notes akin to a Loire Cabernet Franc. On the palate, it displays remarkable concentration and a smooth, velvety texture. The finish is pristine and invigorating, with saline notes and another touch of pepper. Best enjoyed lightly chilled. 

 Domaine de Bellivière, situated in the northernmost vineyards of the Loire, embodies the relentless pursuit of biodynamic winemaking despite the challenges posed by nature. Eric and Christine Nicholas, along with their son Clément, navigate frost, mildew, oidium and hail, resulting in significant harvest losses. However, their unwavering commitment and the support of their local community have allowed them to plough on (if you'll pardon the pun), undeterred. The wines, which are vinified with a hands-off approach and aged in ancient caves, are known for their exceptional quality, purity and precision, beautifully capturing the haunting beauty of the region. The family's enthusiasm, optimism, and continuous quest for improvement drive them forward, making Domaine de Bellivière a beacon of excellence in the Loire Valley.
