The palate is rich and elegant, with a slightly creamy texture.\u003c\/p\u003e\n\u003cp\u003eDani, the winemaker behind DiT Celler, is also known for his work at Azul Y Garanza, but he first fell in love with vines in Monstant. DiT Celler now produces the first certified organic wines of the region, in the Sierra de Llabería Natural Park. The vineyards, planted on granitic sand soil, are surrounded by forest and biodiversity and are ecologically cultivated. Indeed, these are among the first wines in the appellation to be certified, and thanks to their sustainable farming practices, the effects of the Mediterranean sea breeze are spectacularly showcased. The harvest is manual, and in the cellar, only the finest grapes are selected.
