Gorgeous partial skin contact blend from Staffelter Hof, that has a bit of preserved carbon dioxide for added 'spritz'. This is the first batch from winemaker Jan Matthias Klein's climate change experiment, trying to grow Portuguese grapes in the Mosel region of Germany. The result is a slightly worrying triumph. The grapes have been co-fermented and undergone malolactic fermentation, which has created a dry, cloudy wine, with an apple juice nose that opens into a tart, cidery, slightly tropical palate.

ORGANIC/BIODYNAMIC/VEGAN/UNFILTERED/MINIMAL ADDED SULPHITES

This digestif is not fortified, but maintains a bright, nutty, dry palate. Its grapes are dried on racks for 7-10 days to concentrate their sugars, then pressed and aged for 4 years in small barrels (called Caratelli). After this, it is then aged further in the bottle for 5 years. This results in a layered, savoury, more earthy profile.

A fresh, skin contact white, grown in the largest desert in Europe. After spending 10 days in open vats with their skins, the grapes finish fermenting in Spanish amphora for 6 months. This wine has complex fruity aromas, a bright body with a notable taste of apple skins and a tannic, dry finish.

Tillingham White

VEGAN/UNCERTIFIED BIODYNAMIC/LOW SULPHUR

A light, grippy wine, with smokey notes of apple and stone fruit. No filtration or fining, and minimal sulphur at bottling. A cornucopia of different grapes, with even more variety in terms of how they're processed. These include whole bunch pressed, destemmed and crushed, skin contact, no skin contact, foot trodden, basket pressed, steel, oak, the list goes on.

Tillingham is the brainchild of Ben Walgate, who has quickly become a winemaker to keep your eye on. Tillingham End Grain

VEGAN/UNCERTIFIED BIODYNAMIC/NO ADDED SULPHITES

A blend of several different whites, two of which (Ortega and Schönburger) were foot trodden with skin contact fermentation, and two (Chardonnay and Bacchus) were whole bunch fermented in steel. The Bacchus also got some time in oak. The result is a complex orange wine, with a savoury profile full of stone fruit and spice.

Tillingham Col 17 Sparkling

UNFILTERED / MINIMAL SULPHUR / VEGAN
Col is short for Col Fondo, the Italian term which describes the "Ancestral Method" of re-fermantation in the bottle without disgorgement. This wine is blend of Pinot Noir, Chardonnay and Pinot Meunier, part fermented in oak barrels, before bottling in the spring with a small addition of sugar, which is then refermented by wild yeast. A must drink this Christmas/New Year, brilliantly crisp yet mouth-filling and in one of the most striking bottles we’ve seen in a long time.
