VEGAN/UNCERTIFIED BIODYNAMIC/LOW SULPHUR

A light, grippy wine, with smokey notes of apple and stone fruit. No filtration or fining, and minimal sulphur at bottling. A cornucopia of different grapes, with even more variety in terms of how they're processed. These include whole bunch pressed, destemmed and crushed, skin contact, no skin contact, foot trodden, basket pressed, steel, oak, the list goes on.

Tillingham is the brainchild of Ben Walgate, who has quickly become a winemaker to keep your eye on. The primary focus of the label is ecological biodiversity, which has led to the production of distinct, exciting wines. Using natural methods, they combine ancient traditional farming techniques and contemporary best practice to create a range of low intervention wines that allow the grapes to really shine.

Tillingham End Grain

VEGAN/UNCERTIFIED BIODYNAMIC/NO ADDED SULPHITES

A blend of several different whites, two of which (Ortega and Schönburger) were foot trodden with skin contact fermentation, and two (Chardonnay and Bacchus) were whole bunch fermented in steel. The Bacchus also got some time in oak. The result is a complex orange wine, with a savoury profile full of stone fruit and spice.

Akemi Oaked Viura

Created especially for Spanish restauranteur Felix Jimenez, this Viura is the only wine he'll let customers eat with his sushi. 

It even smells like sake, with some floral notes as well. Subtly oaked, it's dry, rich and textured, balanced by the naturally bright tropical expressions of the Viura grape. Think grapefruit, tropical fruit, vanilla, and pepper.

Perusini Traminer

UNCERTIFIED ORGANIC

Floral and rosy, with lots of delicate stone fruit to round it out. A tiny touch of saltiness in the palate makes this an interesting, not to mention yummy, Traminer.

The vineyards this producer uses sit right next to the Slovenian border of Italy, and close to where Italy meets Germany, bringing a unique quality to their wines. They have worked for three generations to refine this, and their hard work shines through in their wines.

Another killer skin contact white by the Slobodne family, this orange Riesling gets its name from the 6 months it spends in terracotta clay eggs. It is unfiltered and unfined, tart and fresh, with a bit of tannin and ripe fruit. 10 days of skin contact has turned it a lovely golden amber hue.
