An old, traditional recipe that produces a Vermouth Bianco of original and traditional amber colour. Fresh herbs and exotic spices are infused in white wine and sugar, followed by a long maturation that allows the Vermouth to reach a real elegance of aroma and flavour.

On the nose, it displays enveloping aromas of white flowers, vanilla, cinnamon, and raisins, and the palate boasts a soft, full-bodied, and mouth-covering texture, which is kept fresh by a slight bitterness, good acidity and an intensely spiced finish.

Best served at 14°C in large, bowled glasses or in deep tumblers. Finish with ice and a little spritz of orange zest.

Petillant Naturel, or Pet Nat for short, is a sparkling wine made in the 'methode ancestrale', which is to say, bottle with residual sugar which then continues to ferment in the bottle, finishing relatively dry with pleasantly frothy bubbles. This is wonderfully drinkable, and a natural progression for Prosecco drinkers looking for something a little more interesting while still being easy and fun to drink. This is bright with acidity, which balances the slight sweetness, similarly to Prosecco.

Packed full of citrus and ginger with an amazing complexity and roundness to it from the delicate oak treatment and malolactic fermentation. It has an underlying minerality on the palate but balanced with acidity and fruit. It really is a joy to drink and you can tell how much care and attention has been put into the winemaking.
The grapes are fermented for 11 days whilst macerating with their skins before being pressed into old oak barrels. Nothing is added apart from a tiny amount of sulphur before bottling.

Calcarius are based in Apricena, in the northern region of Gargano, Puglia (just south of Abruzzo). Valentina Passalacqua oversee a farm comprising 80 hectares of vines, fruit, and vegetables. This project bears the fruits of patient observation, attention to terroir, and a commitment to indigenous varietals. The vineyards are characterised by Kimmeridgian calcareous soils (thus Calcarius) and are true wines of terroir - mineral, tense, and uncompromising.
